Here is a snack/ dessert recipe I just made using tapioca pearl, sweet potato, raisins and coconut milk.
Tapioca Pearl with Sweet Potato in Coconut Milk
Ingredients:
100g tapioca pearl
1 sweet potato ( peeled and cubed into 1/2" size)
2 cans coconut milk
400mL water
1- 1 1/2 cups sugar (as you desire)
a handful of raisins (optional)
Procedure:
1. Boil water in a pan.
2. Add in the tapioca pearl and coook for about 3-4 minutes.
3. Add in the coconut milk. Let it boil for about a minute or two.
4. Add in sugar, sweet potato and raisins.
5. Cook for another 4-5 minutes, constantly stirring.
6. Serve. (It actually taste better when it's cold, in my opinion)
